Keep it simple I say and let the asparagus flavor shine through. All you need is a little olive oil, salt, pepper, lemon and a sprinkle of parmesan cheese and you are set. You will cook these little gems until they start to get tender but definitely not mushy. And cook them in a hot oven so the sugars caramelize and bring out the sweetness in these vegetables. After you coat the asparagus in olive oil and seasoned with salt and pepper, place them in a preheated 425 to 450 degree F. oven. Be sure and rinse the asparagus and dry with a paper towel before seasoning. Then place them in a single layer on a baking sheet lined with either aluminum foil or parchment paper. You will roast these until they are just tender. The time will vary depending on how thick the asparagus stalks are. (Somewhere between 8 and 15 minutes). The thicker they are the longer they will take. Once you take them out of the oven, drizzle fresh lemon juice over all and top with parmesan cheese if you like. Serve immediately. You can also bbq these if you choose. Rotate (roll them over) them on the grill as they cook. This is such a fast, easy, and delicious way to get more vegetables into your diet. One gets hit by a car and is rushed to the hospital. After performing surgery, the doctor comes out and tells the other asparagus, "I have good news and bad news. The good news is, your friend will live. The bad news is, he'll be a vegetable for the rest of his life." Leave me a comment below if you like this joke.
