2 tbsp (30g) unsalted butter, for cooking fennel
1/2 cup (100g) gruyere cheese, grated
1/4 cup (56g) unsalted butter
1/2 cup (120g) sour cream, room temperature
1/2 cup (120ml) half-and-half, room temperature
salt to taste
pepper to taste Topping
4 or 5 strips of bacon, cooked and crumbled
1/2 cup (50g) gruyere cheese, grated Pretzel Topping
1 1/2 cups (100g) pretzels, crushed
1 tbsp (15g) Dijon mustard
