Tiffin recipes are always high in demand. For picky eaters, cooking is always challenging. I being a mother try to make food for my kids according to their taste buds.
Now here in Riyadh, kids come back from before lunch, so their tiffin is always either a snack or breakfast dish. But I know in many places, specially my hometown in Kerala, we find it difficult in sending varieties in tiffin for kids or husband or even ourself if we are working. So to have along with rice or tori, I have tried a few varieties as a side dish that we had while having lunch. You could prepare this for your tiffin too. Potato – 1 medium sliced
Amaranth leaves – 3 cups chopped
Garlic – 4 – 8 ( depending on your taste )
White raw rice / basmati rice – 1 tbsp
Salt – very little
Coconut – 1 cup grates
Green chillies – 2 – 3
Shallots – 2 ———————————————— OMLETTE MASALA
Egg – 3 ( mix with red chilly powder, garam masala powder, black pepper powder, salt and some water )
Oil – 2 – 3 tbsp
Onion – 2 small
Green chillies – 2 – 3
Curry leaves – a few
Tomato – 1 large
Salt
Turmeric powder – 1/2 tsp
Kashmiri red chilly powder – 1 tsp
Garam masala powder – 1/4 tsp
Hot water – to reduce the thickness
Coriander leaves – a few chopped ———————————————— BRINJAL IN CURD ( DAHI WALA BAINGAN )
Brinjal ( Egg plant ) – 2 ( fry with some salt )
Thick curd – 2 cups
Garlic – 5 – 7 cloves
Green chillies – 3 – 4
Oil
Turmeric powder – 1/2 tsp
Coriander powder – 1 tbsp
Garam masala powder- 1/4 – 1/2 tsp
Chaat masala – 1 big tbsp
Cumin powder – 1/4 tbsp
Water – add as per needed
Salt
Coriander leaves – a few Tempering:
Ghee – 2 tbsp
Mustard seeds – 1tsp
Cumin seeds – 1 tsp
Dried red chillies – 4 – 5 ————————————————— BITTERGOURD MASALA
Bitter gourd – 1 large
Red chilly powder – 1 tbsp
Turmeric powder – 1/2 – 3/4 tsp
Fennel seed powder – 1/4 tsp
Black pepper powder – 1/4 – 1/2 tsp
Oil – 2 tbsp
Onion – 1 large
Green chillies – 2 -3 chopped
Curry leaves – a few
Ginger – 1 tbsp chopped
Tomato – 1 large chopped
Red chilly powder – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 – 1.5 tsp
Salt
Melted palm jaggery – 2 tbsp
