1 minute cranberry sauce, easy vegan potatoes au gratin, and a holiday salad that you have to taste to believe

– 2 tbsp fresh orange juice
– 1 pinch of nutmeg Stir to combine and chill until serving
↠ The Best Holiday Salad Recipe – 1/3 cup raw pecans– 1/3 cup raw walnuts
– 1/4 raw pumpkin seeds
– 1/2 tsp dried thyme
– 1/2 tsp dried rosemary
– 2 dashes of cayenne pepper (optional but recommended) – 2 pinches of salt
– black pepper
– 1 tsp olive oil Pulse a few times in a food processor and transfer to a parchment paper lined baking sheet. Bake at 350 for 5-7 minutes. Keep an eye on it so it doesn't burn
In the meantime, make the dressing. You will need: – 2 tbsp cranberry sauce– 3 tsp apple cider vinegar
– the juice from 1/2 of a large orange – 1 tsp maple syrup – pinch of salt
– pinch of onion powder
– black pepper Stir to combine and set aside. In a large salad bowl, combine 5 cups of mixed greens with 1 chopped apple, 1 chopped persimmon, and a handful of dried cranberries. Add in the toasted nut mixture and drizzle dressing on top. Toss well and serve with freshly cracked black pepper on top
Tip: the cranberries are important so don’t forget those!! ↠ Vegan Potatoes Au Gratin For the sauce: 1 cup raw cashews1 cup unsweetened almond milk, + 1/4 cup for later on
1/2 tsp sea salt
1/2 tsp ground sage
1/2 tsp onion powder
1 tbsp nutritional yeast 5 medium potatoes, peeled and thinly sliced 1/2 large onion
1-2 cloves garlic
12 button mushrooms, thinly sliced
4 sprigs of thyme
1 sprig of rosemary salt + pepper You will need additional salt, pepper, nutritional yeast, and vegan parmesan cheese for layering.
